Took my, new to me, 04 CE Z06 to it's 1st cruise in on Plymouth Harbor. Nice turnout. Maybe 150 cars.
The best part was the 60 mile round trip....

Those aren't the right plugs for that motor. You should be running AC Delco R45 plugs. I would start there.
After all that sitting a carb rebuild might be in order.

The last two Big Blocks I owned, 390 and 400 horse, ran fine on Unleaded 93 Octane with 10% Ethanol. No pinging, no detuning. A 45 mile drive to get it sounds very relaxing.

All Dot 4 is compatible with Dot 3. It is not Synthetic like Dot 5.
LV is low viscosity Dot 4. Higher boiling point than Dot 3.
I use Pentosin Super Dot 4 for brakes and modern hydraulic clutches....
